Jack is a seasoned restaurant and private chef, hailing from the Cayman Islands, he loves to infuse dishes with punchy flavours and carefully sourced exotic ingredients from both land and sea.

Whether crafting individual dishes or orchestrating an entire event, he is dedicated to delivering a distinctive and unforgettable dining experience.

STYLE AND SOURCING

After enjoying so many diverse environments and ingredients, it is Jack's focus to create an authentic experience by sourcing and producing as much of his dinners from scratch as possible. From making the paper for the menus, to crockery and pantry items.

Powerful flavours using preserved and cured ingredients, balanced with fresh and exotic products are a main stay.

All food lovers know, the best dishes are made with great ingredients, so its important to take time and care when sourcing.

PASSIONS

BEEKEEPING

Jack has been beekeeping for 20 years relocating hives causing a nuissance and helping establish apiaries around the world.

FORAGING

Wild foods are a huge focus on the menu, making sure to aquire ingredients thoughtfully so we can create a connection with nature, through food.

SUSTAINABILITY

Eating good food can be done while respecting our surroundings, All decisions are made with respects to the thing that makes food amazing... nature!

When vagabonding, finding hidden gems, investigating food history, cultures, foreign ingredients and techniques all mean authenticity when designing dishes and creating visual content.

Chellamella was formed four years ago, with the focus on changing the landscape of private dining in the Caribbean. Everything is sourced by the team and almost every detail of the dining experience is made in house, from the menus and crockery to lamps on the tables.

Cookwear is a food and nature focussed clothing brand that uses illustrations and artwork made by chefs, for chefs.
